Joe’s favourite Chilli Mud CrabsCrab meat is delicate, so it doesn’t need powerful flavours. For best flavour it is recommended to start with live crabs.
Cut crabs into large pieces, remove stomach sac and furry bits. Heat olive oil, add garlic, ginger & chilli, stir fry 2 minutes. Stir in sweet chilli sauce, tomato sauce and 2 tablsp dry white wine, add crab pieces and soy sauce. Keep stir frying 3 to 5 minutes until crab pieces are well coated and cooked.
Ingredients: 2 medium size mud crabs, 2 tablsp olive oil, 2 fat garlic gloves and 2 teasp fresh ginger and 2 small red hot chillies all finely chopped, 1/3 cup sweet chilli sauce and 1/3 cup tomato sauce, 1 tablsp soy sauce.
